Always fresh.jpg

Always fresh

At the heart of everything we do is freshness.

Fruits and vegetables are harvested, prepared, and served on the very same day. We use ingredients grown in our own or local gardens and orchards, ensuring complete control over freshness, quality, and seasonal authenticity. Each ingredient is harvested at peak ripeness to preserve its natural freshness and full flavour. This commitment allows us to serve ingredients at their very best, just as nature intended.

Fruits and vegetables are cultivated in the Mediterranean climate, where sun, soil, and sea air shape their distinctive character.

In season.jpg

In season

At the core of our culinary philosophy is seasonality.

From sun-ripened fruits to freshly harvested vegetables, everything is cultivated with care, patience, and respect for nature. Seasonal vegetables such as chard, spinach, lettuce, parsley, celery, garlic, onions, leeks, rocket, tomatoes, cucumbers, potatoes, aubergines, peppers, broad beans, and cantaloupes grow naturally in the fertile soil of the estate.

This seasonal approach preserves authentic Dalmatian tradition while highlighting the natural flavour, freshness, and nutritional value.

Discover the authentic flavours of Mediterranean cuisine with a Dalmatian touch.

Always homemade.jpg

Always homemade

Homemade — from garden to table

Our homemade specialities reflect the authentic flavours of Dalmatia. Everything is made entirely inhouse, following our family recipes passed down from our grandmothers. We prepare each dish ourselves with care, patience, and respect for tradition.

Homemade food prepared according to traditional local recipes carries the true flavour of our region and preserves its culinary heritage.

It is a reflection of time, place, and craftsmanship that cannot be replaced.

Taste tradition, made by hand, just as it has always been meant to be.

What Are Balote?

Balote is a classic Mediterranean game whose origins are still debated, but whose charm has long spread across Europe and beyond. The rules are simple: get as close as possible to the bulin, the small target ball that sets the rhythm of the game.

Played in teams, balote is less about competition and more about connection, laughter, and relaxation, an essential part of the Dalmatian way of life. Here, time is not measured in hours, but in shared moments.

Traditional Dalmatian Food You’ll Never Forget at Konoba Argola – a Dalmatian Restaurant Near Split, Croatia

The menu is focused exclusively on Dalmatian cuisine, along with traditional specialties from Poljica prepared to order. The Kaštelančić family grows most of its own produce, using fresh, seasonal ingredients to prepare traditional specialties such as peka and soparnik.

Soparnik – EU Protected Dalmatian Heritage Dish

Soparnik is one of the oldest traditional dishes from the Poljica region. Once a simple meal for farm labourers, often prepared during fasting days or as everyday food, today it is a true symbol of the region’s culinary heritage and a protected EU specialty with a geographical indication, alongside products such as Dalmatian, Drniš, and Istrian prosciutto.

The dough is made from flour, water, and salt, then divided into two thin circular layers. A filling of chopped salted chard and onion is placed between them, and the edges are carefully sealed by twisting. Soparnik is traditionally baked under a hot iron bell or ash, then finished with olive oil and fresh garlic for its distinctive aroma and flavour.

It is usually transferred from a wooden board onto a hearth and baked for about 20 minutes. At Konoba Argola, however, it is prepared in a more distinctive way – covered with hot ash instead of the bell, giving it an even more authentic character. Once baked, soparnik is cut into diamond-shaped pieces, with the centre piece traditionally considered the “honour slice.” Perhaps that very centre piece of soparnik will be yours when you visit us.

Peka – A Timeless Dalmatian Specialty

Peka is one of the most iconic traditional cooking methods in Dalmatian cuisine, prepared under a heavy cast-iron bell-shaped lid over glowing embers. The ingredients are placed in a shallow tray, covered with the bell, and surrounded by hot coals, allowing slow cooking in their own juices for rich flavours and tender meat or seafood.

At Konoba Argola, peka is traditionally prepared with veal or octopus, potatoes, seasonal vegetables, olive oil, herbs, and a touch of wine. The fire is prepared over an hour in advance using oak, beech, hornbeam, or vine wood to create strong embers.

Once prepared, the bell is covered with embers, allowing the dish to cook evenly from all sides. During the roughly two-hour cooking process, it is occasionally opened to stir, turn ingredients, or add liquid if needed.

The result is one of the most authentic flavours of traditional Dalmatian cuisine, a must-try experience when visiting Dalmatia.
